A VILLAGE farm has just the tonic for it’s leftover fruit that would otherwise go to waste.
Pete Thompson, of Great Oakley, has unveiled his latest innovation to use up second grade fruit.
Reliquum London Dry Gin and Reliquum Plum are now being sold - they use an eau de vie made from Cotchel apple juice, which is made from imperfect apples grown on Thompson’s farm.
Pete said: “Our Cotchel juice is something we learnt to do with our apples and pears but we had plums and apricots left too.
“But to make a new product out of the waste, it makes sense.”
The London Dry and Plum, made in partnership with the English Spirit Distillery, are already being sold at the Alma Inn in Harwich and the Mistley Thorn as well as the Mistley Kitchen.
Dr John Walters, master distiller from the English Spirit Distillery said: “We are delighted to work alongside Thompson’s and develop their world class product.”
