A SWEET new flavour has been selected in a sausage company’s competition inviting foodies to choose their own unique test.

Wicks Manor, based in Little Totham, launched the competition in July named “The Great Sausage Mash Up” run by them and the East of England Co-op.

It was held to celebrate the 50th anniversary of the farm, and encouraged foodies to invent their own unique flavour, with pork and honey being crowned the champion, invented by Amy Buckle.

Other suggested ingredients included apricot, spinach, pomegranate and even cream cheese.

After much deliberation by three generations of the Howie family, owners of Wicks Manor, three shortlisted recipes – pork with honey, pork with chorizo and sundried tomato with jalapeno – were selected and put to the public vote.

More than 350 votes were cast between August 14 and September 14, with pork and honey securing 44 per cent of the vote. The winning recipe will now be put into production and stocked exclusively in select East of England Co-op food stores in October.

Amy Buckle said: “How exciting! I love honey so I think the sausage will taste great. I am really proud that my suggestion won and I am looking forward to seeing my name on the pack when I next pop to the Co-op.”

Fergus Howie, who runs the business with his brother Hamish, said: “The Great Sausage Mash Up has been a huge success with hundreds voting for the flavour of our next sausage. Thank you to everyone who got involved.”
